No Bake Vegan Brownies

Looking for a new way to use up Cacao Nibs and Cacao Powder that had been sat in the cupboard for a while and came across the Minimalist Baker website showcasing a delicious looking chocolate no bake vegan brownies. Decided to attempt it ourselves and as ever as slight variations on the original and have stripped back the instructions.

No Bake Vegan Brownie

You’ll need:

Food Processor
Brownie Tin (approx 8 x 8 inches)
Baking Paper
Saucepan
Pyrex bowl to melt Chocolate over water.

Ingredients:

150g Crushed walnuts
150g Flaked Almonds
250g Pitted Dates
60g Cacao Powder
2 tbsp Cacao Nibs
¼ tsp Pink Himalayan Salt

Icing:

60ml vanilla almond milk
2 tbsp coconut oil
3 tbsp Icing Sugar
150g Dark Chocolate

No Bake Vegan Brownie

Instructions:

Set aside some of the walnuts for decoration.

Whizz the rest of the walnuts and the almonds in food processor.
Add Sea Salt and Cacao then set aside

Whizz dates in food processor and add the nut and cacao mixture back in for a further whizz.

Remove the dough like mixture and press down into a parchment lined brownie tin


Sprinkle set aside walnuts and cacao nibs to the top of the dough and press down into the dough mixture.

Chill in fridge for 15 minutes

Meanwhile heat chocolate in the milk, then add melted coconut oil and whisk. Set in Fridge for 10 minutes to thicken.

Remove from fridge add icing sugar gradually to thicken. Whisk again to combine until fluffy.

Remove brownies from fridge and ice. Eat and say Wow!
