Nutty Pumpkin Coconut Granola Bars

I wanted to find a way to include Pumpkin in our lives this Halloween season other than the obvious Pumpkin soup or pie. This simple granola recipe from Grow Forage Cook Ferment seemed like an easy idea and it was. They go on to make bars so this is a recipe and method of two parts.

Pumpkin Granola Bar

My version uses mixed nuts rather than almonds, desiccated coconut rather than shredded and peanut butter rather than almond butter. The outcome, utterly delicious, totally spicy and perfect for the Halloween and Autumn season.

The granola is a pleasure to spoon feed dry but for those of you who like milk and yoghurt, sure give it a go. The bars are kind of stodgy but perfect with a nice cup of tea!

Granola Ingredients: (American measurements as I’ve invested in cups instead of trying to make the conversions each time - apologies)

3 cups rolled oats
1 cup chopped mixed nuts
¾ cup of dessicated coconut
1 tsp cinnamon
½ tsp ground ginger
¼ tsp cloves
¼ tsp allspice
¼ tsp nutmeg
¼ tsp salt
¼ cup coconut oil
¼ cup pure maple syrup
½ cup pumpkin puree

Method:

Basically mix all the dry ingredients (oats, nuts, coconut, cinnamon, ginger, cloves, allspice, nutmeg and salt) in a bowl.

Then melt the coconut oil in with maple syrup and pumpkin puree and stir well.

Add the wet ingredients to the dry ingredients and combine until the dry mixture is coated.

Place on a baking tray in the oven for about 30 minutes until golden. It’s a good idea to stir halfway through so that both sides become golden.

 

Part 2 - Granola Bars (I did this part the following day)

Ingredients:

3 cups Pumpkin Coconut Almond Granola
¼ cup coconut oil
¼ cup pure maple syrup
¼ cup peanut butter
¼ cacao nibs
¾ cup pumpkin puree
½ tsp cinnamon
¼ tsp cloves
Pinch of Himalayan Pink  Salt

Method:

Place the granola in a large mixing bowl.

Melt the Coconut Oil in a saucepan and add the rest of the ingredients and stir well.

Add contents of saucepan to the granola in the mixing bowl and combine.
Press out in a baking tray measuring around 9 x 9 inches and pop in the Fridge to set.

Eat! Enjoy!
